1/2 cup plain or vanilla nonfat yogurt 1/2 cup unsweetened applesauce 1 tablespoon raisins 1/8 teaspoon ground cinnamon 1 teaspoon brown (or regular) sugar 1 tablespoon nuts or crunch cereal (oat cereal, corn flakes, etc.)
Combine all ingredients and mix well. Cover and refrigerate until chilled. Eat and enjoy as a snack or a healthy dessert! Makes 2 servings
Applesauce Breakfast Cake
1 1/2 cups flour 1 1/4 tsp baking powder 1/4 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg (optional) 1/2 cup granulated sugar 1/2 cup brown sugar 1 egg 1 1/4 cup applesauce 1/4 cup vegetable oil 1 tsp vanilla extract 1/2 cup raisins
Preheat oven to 350 degrees F. Lightly grease and flour a 9 inch Bundt pan or a 8 by 4 inch loaf pan. Combine flour, baking powder, baking soda, nutmeg and cinnamon; mix well. In a separate bowl, combine sugars, egg, applesauce, oil and vanilla. Mix into flour mixture until combined then stir in raisins. Bake for 30 to 35 minutes or until cake is browned and a toothpick inserted into center comes out clean. Cool 10 minutes and then turn pan upside down onto a rack or plate. Allow to cool completely before serving.
